Bill has been working and travelling in outback New South Wales and South Australia since the early 1990s. He and Cathy established Outback Beds Tours in 2019. Drawing on strong local connections, a background in hospitality and a love of cycling, food and travel, Bill creates personalised small-group adventures across Australia and selected overseas destinations.
Liam
Born in Italy to an Italian father and Australian mother, Liam brings a unique blend of cultures, hospitality and connection to Outback Beds Tours. A passionate cook and founder of OM Taste, he shares Italian food, language and culture while creating welcoming, authentic experiences that inspire belonging and meaningful connections.
Lukas
Lukas is a food science lecturer and researcher at Adelaide University’s Wine Research Centre, specialising in wine and brewing. A passionate mountain biker originally from Austria, he leads our South Australian and Alpine cycling adventures, combining world-class riding with local food, wine, beer and authentic regional experiences.
Cathy
Cathy keeps Outback Beds Tours running smoothly, helping with itineraries, bookings and communication. She has lived and worked in outback New South Wales for over 20 years. Her local knowledge and eye for community events help guests discover more along the way.
Tilly
Tilly is a graduate in German and Media and works in public relations. She manages social media for Outback Beds Tours, helping share the places, people and experiences that make our journeys special.
Morad
Morad is a certified Moroccan tour guide with years of experience and a loyal following. Fluent in multiple languages, he shares authentic cultural and culinary experiences with warmth and local insight. As Bill’s brother-in-law, Morad welcomes every guest like family, offering exclusive access beyond the typical tourist trail.
